WALNUT CHOCOLATE BARS

Walnut Chocolate Bars are always a satisfying treat and tastes superb with a cup of hot tea or coffee. Enjoy

Serving 24

Ingredients

½ cup walnuts

1/3 cup granulated sugar

¾ cup all purpose flour, sifted

6 tablespoons unsalted butter, (cold- chopped)

Topping

1/3 cup water

2 tablespoons unsalted butter

1/3 cup cocoa powder

½ cup granulated sugar

1 teaspoon pure vanilla extract

pinch of kosher salt

2 eggs

confectioners sugar (optional for dusting)

Directions for Walnut Chocolate Bars 

Grind the walnuts with tablespoon of the sugar in a food processor, nut grinder or blender.

Preheat the oven to 350°F (180°C) Grease the sides and the bottom of an 8-inch square cake pan.

In a bowl, combine the ground walnuts, the remaining sugar and the flour. Rub in the butter until the mixture resembles coarse crumbs.

Alternatively put all the ingredients in a food processor until the mixture resembles coarse crumbs.

Pat the walnut mixture into the bottom of the prepared pan in an even layer. Bake for 20 -25 minutes.

Meanwhile, to make topping p melt the butter with the water in a small saucepan over low heat. Beat in the cocoa and sugar.

Remove the pan from the heat stir in the pure vanilla extract and salt and allow to cool for 5 minutes.

Beat in the eggs until blended. Pour the topping evenly over the crust when it is cooked.

Return to the oven and bake for about 20 minutes- until set. Place the pan on a wire rack to cool. Cut into 2 ½ x 1-inch bars and dust with confectioners’ sugar. Enjoy. Store in refrigerator.

NOTE

Bar cookies can be stored for a day or so in their baking pan. Cover the pan as tightly as you can with foil, or slide it into plastic bag, gently press out as much air as possible and seal tightly.
