
Quiche with Broccoli and Ham

Quiche is a baked tart with a savory filling thickened with eggs. “Learning to make quiche (a custard cooked in a tart shell) is a good way to add variety to cook’s repertoire” – Fannie Farmer.
Ingredients
1 unbaked deep-dish pie crust (9-inches)
2 tablespoons all-purpose flour
1 cup shredded part-skim mozzarella cheese
½ teaspoon unsalted butter
3 large eggs, lightly beaten
1 cup low-fat milk
½ cup (small) yellow onion chopped
1 cup shredded Swiss cheese
1/8 teaspoon salt
1/4 teaspoon pepper
1/2 cup diced fully cooked ham
1/8 teaspoon ground nutmeg
1/2 cup chopped fresh broccoli
Directions
- Preheat the oven to 400°F. Line a 9-inch quiche dish with the pastry, flute the edges, prick the bottom with fill with the dried beans * and bake for 15 minutes or until light brown. Discard the beans and cool on the rack while preparing filling.
- Meanwhile, in a 6-inch (nonstick) skillet, melt the butter over moderately high heat. Add the onion and sauté until soft, then transfer to a medium size bowl. Toss cheeses with flour; Stir in the ham and broccoli. Spread in the pie crust.
- In the same bowl whisk the eggs with the milk, salt, pepper and nutmeg. Pour over the pie mixture and bake, uncovered for 35 minutes or until the center is set.
- Let stand 10 minutes before cutting. Enjoy.

NOTE
- The BEANS are used in order to maintain the shape of the crust as it is being baked. (known as pie weights) If you eliminate the weights during baking, you may encounter undesirable levels of curling, shrinking or puffing.
- This tasty tart can be made in a shorter time if you make the pastry shell in advance and keep it frozen until required.
