
Orange Almond Upside Down Cake

INGREDIENTS
1 tablespoon butter for pan, or cooking spray
1 tsp Cointreau -french orange liqueur or fresh lemon juice
5 (organic) medium-sized oranges*
2 cups almond fine meal (or regular)
1 teaspoon baking powder
2 Tbs powdered Stevia (or ¾ organic granulated sugar)
6 large organic eggs, at room temperature
1 teaspoon pure vanilla extract

PREPARATION
FIRST- fill pot with water and boil ONLY TWO oranges for 30 minutes.Set aside and allow to cool.
Preheat oven to 375 F. Grease a 9-inch round cake pan. Set aside.
Take the two boiled oranges, cut in half and remove seeds if there are any. Place in blender and blend until smooth.
Next, prepare the orange bottom. Place oranges on a clean, flat surface, and slice away the rind and pith, top to bottom. Slice each orange crosswise into 1/4-inch-thick wheels; discard any seeds. Arrange the slices single layer over the parchment paper, starting from the outside and working your way in. Set aside.
Use a stand or hand mixer to beat eggs and Stevia 5 minutes, until they fluffy.
Add almond meal, baking powder, orange puree and vanilla, beat another minute.
Scrape batter into pan over sliced oranges.
Transfer to oven and bake until cake is golden brown and a toothpick inserted in the center emerges clean, 45 minutes.
Remove from oven, Cool cake in pan 10 minutes, then run a knife along pan’s edges to loosen it; When cake is cool enough to touch, remove from pan, set cake on plate, remove parchment carefully invert the cake onto a wire rack. and dust with powder sugar.(optional) Serve and Enjoy

-Use spring-form pan and parchment paper
-You don’t have to use blood oranges, you can use naval oranges.
Almonds are not wheat. Regular Almond meal is good, but Fine Almond meal is much better. Always use parchment paper because of the turning process. Almond meal and Almond flour are both finely ground almonds and there is NO official difference between the two products..
Almond Flour is made from very finely ground almonds. The almonds in almond flour have been processed (slightly- not processed in a bad way!) The skins of the almonds have been removed so that the desirable fine texture of flour can be achieved. They are blanched, so that the flour is a crisp white color.
Almond Meal Meal in general, are made by a similar method as flour. The final grain or particle size is just a bit larger,it hasn’t been ground as finely as flour. Almond meal, though, is typically made from unblanched almonds with the skins on —the skin holds additional nutrients that are lost when they are removed.
