This home baked Lemon squares are delicious and mouth-watering lemon filling have been a favorite for generations. Enjoy  

 

Serving: 12

Ingredients

2 cups all purpose flour

½ cup confectioners sugar

pinch of kosher salt

¾ cup butter unsalted

1 teaspoon cold water

For the lemon layer

4 eggs

2 tablespoons all purpose flour

1 ¾ cup granulated sugar

½ teaspoon baking powder

1 teaspoon grated lemon rind

¼ cup fresh lemon juice

confectioner’s sugar for dusting

 

Directions for Lemon Squares

Preheat oven to 350°F. Sift the flour, salt and confectioner’s into a mixing bowl.

Rub the butter into the flour until the mixture resembles coarse bread crumbs. Add the water and toss lightly with a fork until the mixture forms a ball.

Press the mixture evenly into an ungreased 13×9 – inch baking dish.

With fork, prick dough all over. Bake for 15-20 minutes, until light golden brown. Remove from oven and allow to cool slightly.

 

Meanwhile, to make the lemon layer, beat together the eggs, granulated sugar, flour, baking powder, lemon rind and fresh lemon juice.

Pour the lemon mixture over the hot crust. Return to the oven and bake for 25 minutes. (Do not over bake or surface filling may crack.) Allow to cool in the baking dish completely- placed on a wire rack.

Before serving, sprinkle the top with confectioners sugar. Cut into squares with a sharp knife, serve and enjoy!

To store cover pan and refrigerate.
