Lazy Apple Pie Cake
Lazy Apple Pie Cake. Apples and cinnamon are such a great flavor combination. Our house smells AMAZING of cinnamon & vanilla, baked apples!
A combination made in heaven, Truly! I used a Granny Smith apple, but any apple will taste great! Pair with dense apples such as Rome,Fuji, Green Dragon or Granny Smith.
6 Tbs milk
1 ½ Tbs baking powder
1 cup butter
3 cups + 3 Tbs all purpose King Arthur flour
1 tsp vanilla extract
¾ cup sugar
6 Granny Smith Apples
3 Tbsp brown sugar
1 tsp ground cinnamon
1 Tbs lemon juice
Preheat oven to 350 F degrees and spray a 13×9 inch pan with baking spray.
In a larger bowl mix 3 eggs, milk, sugar, butter, and continue mixing until it becomes one mass.
Add flour and baking powder. Continue mixing until the mass is thick, but smooth. You may start out with dough that is gummy and sticks to your hands, after a few minutes of kneading and without adding much flour at all, the dough will get much less sticky and you’ll have barely anything on your fingers.
Peel and core apples, then diced them. Add brown sugar, and simmer on low for about 7-8 minutes, then add cinnamon and mix. Set aside.
Divide the dough into 2 equal parts. Roll out 1/2 of the dough over the bottom of your pan. On top of this dough spread apples evenly. Roll out the other half of the dough and place it over the mixture, neatly tucking in the sides.
When making a pie, you almost always have to make holes in the dough with a fork. Poke little holes in a circular pattern on top of the dough with a fork,
Place the pie into the oven and bake for 45 minutes until the crust is golden brown.
Cool completely before serving. Sprinkle with powdered sugar, if preferred. Enjoy!
