Home-Style Skillet Chicken-This is one of my favorite recipes.Quick and Easy dinner for your Family.
4 chicken thighs
2 tablespoon olive oil
4 cloves garlic, minced
¾ pound red potatoes (about 8), peeled and quartered
1 tablespoon Cajun seasoning
½ teaspoon kosher salt / divided
10 pearl onions peeled
1 cup baby organic carrots
½ cup red bell pepper/washed and diced
1 rib celery
2 tablespoon all-purpose flour
1 ½ cups canned chicken broth
2 tablespoon finely chopped fresh parsley
½ teaspoon plus 1/8 teaspoon black pepper /divided
DIRECTIONS for Home-style Skillet Chicken
Combine ½ teaspoon pepper, Cajun seasoning and ¼ teaspoon salt in small bowl. Rub mixture on all sides of chicken.
Heat oil in large heavy skillet over medium high heat. Add garlic and chicken, cook until chicken is browned, about 5 minutes per side. Transfer chicken to plate set aside.
Add onions, potatoes, carrots, celery and bell pepper to skillet. Cook and stir 3 minutes. Sprinkle flour over vegetables, stir to coat. Slowly stir in chicken broth, scraping up browned bits from bottom of the skillet. Bring mixture to a boil, stirring constantly.
Reduced heat to medium low. Return chicken to skillet. Cover and cook about 30 minutes or until cooked through (165°F). Increase heat to medium-high cook uncovered about 5 minutes or until sauce is thickened. Season with remaining 1/8 teaspoon black pepper and ¼ teaspoon salt.
Sprinkle with fresh parley before serving. Serve & Enjoy
Pearl Onions can be a pain to peel. To peel pearl onions – drop in boiling water for 30 seconds and plunge immediately into ice water. The peel should slide right off.
The longer (pearl onions) cook, the sweeter and more caramelized they will become.
