EASY FRUIT PIE

EASY FRUIT PIE

SERVING: 8

 

INGREDIENTS

3 cups self rising flour (sifted)

225 grams butter (8 oz)

3 tablespoon water

FILLING

440 grams (14 oz) canned apples slices, drained

125 grams (4 oz) Sultanas or raisins

440 grams (14 oz) canned apricot halves, drained

2 tablespoons sugar

DIRECTIONS for Easy Fruit Pie

 

Preheat the oven to 375°F (190°C). Sift the flour and place in a bowl. Rub in butter with fingertips until mixture resembles fine breadcrumbs.

Remove one-third of mixture and set aside. Add enough water to mix to a firm dough. Roll out dough and line the base and side of a greased and lined 8-inch (20 cm) springform tin.

To make filling:

Combine apples, apricots and raisins in a bowl. Spoon into pastry case.

Mix sugar into reserved pastry crumbs and sprinkle over fruit. Bake for 10 minutes reduce oven temperature to 350°F (180°C) and bake for 20 minutes longer.

Cool on wire rack. Serve and Enjoy!

 

NOTE

  • Fruit can size vary between manufactures and countries. Use the can size nearest to the suggested size in recipe.
  • Raisins tend to absorb the liquid from your baked goods. Soak raisins before folding them into the batter. Pour enough hot water over the raisins to cover them and let them sit for 10-15 minutes, then drain and use.
  • Sultanas are large green grapes (usually larger than raisins) that have been dried to a rich golden-brown. They are among the most popular dried sweet fruit, due to their sweetness, size, and succulence.
