SERVING: 8 TURNOVERS

INGREDIENTS

1 Easy Puff Pastry from scratch

2 cups small peeled, cored, and diced apples

1 tablespoon sugar

¼ teaspoon cinnamon

1 tablespoon lemon juice

¼ teaspoon nutmeg

1 tablespoon unsalted butter

½ teaspoon pure vanilla extract

1 tablespoon water

egg whisked / optional

1 teaspoon cornstarch

INSTRUCTIONS for Easy Apple Turnovers

Melt unsalted butter in a large skillet over medium heat. Place apples (Golden Delicious or Granny Smith) -peeled, cored, and diced in a large bowl and toss with fresh lemon juice.

Add water, sugar, cornstarch, cinnamon, nutmeg and pure vanilla extract in a medium saucepan. Stir to combine then bring to a boil over medium heat, stirring – boil it for two minutes. Add the apples, cover and cook, (stirring often), until the apples soften, about 5 minutes or until sauce has thickened. Remove from heat to cool slightly.

Preheat the oven to 400°F. (200°C). Grease cookie sheet and line with parchment paper.

Unfold Easy puff pastry from scratch-sheet. Using a rolling pin, gently roll over the pastry to seal any perforations then cut each larger square into 4 smaller squares. Spoon apples onto the center of each squares. Fold over from corner to corner into a triangle shape, and press edges together to seal. Using a fork, crimp together the edges then transfer the turnovers to the prepared baking sheets, spacing them at least 2 inches apart.

You can brush beaten egg over the top of each turnover, and sprinkle with white or vanilla sugar before baking.(optional)

Bake for 20-25 minutes in the preheated oven, until turnovers are puffed and lightly browned. Cool completely before icing.
