BAKED CHICKEN WITH PASTA

Put away the salt for this delicious recipe- the chicken is seasoned with herbs. BAKED CHICKEN WITH PASTA

SERVING: 4

INGREDIENTS

4 tablespoon butter, melted

2 tablespoon fresh lemon juice

4 large chicken pieces

1 tablespoon brown sugar

4 tablespoon Dijon mustard

½ teaspoon dried thyme

1 teaspoon paprika

¼ teaspoon dried basil

400 g (14 oz) dried pasta

1 tablespoon olive oil

½ teaspoon poppy seeds (optional)

DIRECTIONS for Baked Chicken with Pasta

Rinse the chicken in cold water and pat it dry with paper towels. Arrange the chicken pieces in a single layer in the base of a large ovenproof dish.

Combine the butter, Dijon mustard, paprika, lemon juice, brown sugar in a bowl and season with thyme and basil to taste. Brush the mixture over the upper surfaces of the chicken pieces and bake in a preheated oven, 400°F/ 200°C for 20 minutes.

Remove the dish from the oven and carefully turn over the chicken. Coat the upper surfaces of the chicken pieces with remaining mustard mixture, sprinkle over the poppy seeds optional and return to the oven for 20 minutes more.

Meanwhile bring a large pan of lightly salted water to a boil.

Add the pasta shells and tablespoon of olive oil, bring back to boil and cook for about 10 minutes-or until tender but still firm to the bite.

Drain the pasta thorough and arrange on 4 warmed serving plates.Top the pasta with the chicken pieces, pour over the mustard sauce and serve immediately. Enjoy

NOTE

  • Dijon mustard is most often used in cooking, has a clean and mild spicy flavor. German mustard, has a sweet-sour taste and Bavarian mustard is slightly sweeter.
