Chocolate Chip Cookie

Ingredients

  • ½ cup soft butter
  • ¼ cup superfine sugar
  • 2/3  light brown sugar
  • ¼ cup white granulated sugar
  • 1½ cups all-purpose flour/plain flour
  • 1 teaspoon baking powder
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 2/3 cups dark chocolate chi
  • 1 large egg

*For chocolate & nut cookies, add ½ cup chopped hazelnuts or walnuts to the basic mixture. For white chocolate chip cookies use white chocolate

Chocolate Chip Cookie

Instructions for Chocolate Chip Cookie 

  • Whisk the flour and baking powder in a medium bowl. Set aside.
  • In a separate bowl melt the butter. Add in brown and white sugars and whisk– for about 1 minute.
  • Whisk in one egg to the sugar-butter mixtures, scrape the sides of the bowl with your spatula. Add the vanilla and the dry ingredients to the wet and stir with the spatula to fully combine. Stir in the chocolate chips.(optional, hazelnuts or walnuts) The dough will be soft, but do not add more flour.
  • Chill the dough for a minimum of 30 minutes. (This dough can be kept in the fridge for 7 days and raw dough can be frozen for up to 8 weeks.)
  • Place tablespoon of the mixture on a parchment-lined baking sheet. Leave some space between the cookies as they spread out during baking.
  • Bake the cookies at 375 F (190 C) for 10-12 minutes until the cookies are golden brown. Let cool on the sheet for 5 minutes. Using a spatula, then transfer to a wire rack to cool completely. Store them at room temperature in an airtight container for up to 3 days.
